It's a historic month in the world of Japanese spirits. The Kyoto Distillery, founded in 2015, has just released its very first product titled KI NO BI Kyoto Dry Gin. The name KI NO BI (季の美) translates to "The beauty of the seasons." It's a fitting name for Kyoto's first artisan gin. Kyoto, Japan's ancient capital, is renowned for its natural beauty, cultural traditions, and a long history of artisan crafts such as pottery, kimono fabric, and the brewing of sake. "We have strived to make a delicious dry gin, from local botanicals where possible, which does justice to the culture of craftsmanship for which Kyoto has been famed for over a thousand years. If we succeed in this objective, I am confident gin enthusiasts around the world will enjoy KI NO BI." - David Croll, founding member About the Product KI NO BI is made from a rice-based spirit and high-quality local botanicals from Kyoto and other parts of Japan. We've installed a display on the 1st floor of Liquor Burn that features many local products from Kyoto and the surrounding area. Kyoto is one of the most famous places in Japan for sake brewing. We have many bottles of sake that were brewed right here in Kyoto. There is also a Japanese whisky display on the 1st floor across from the one pictured above.
